To mark pancake Tuesday in Ireland, the Creative minds behind foodie favourite OHK Café in Kinsale have put together the perfect pancake recipe!
INGREDIENTS –
Batter Mix:
3 small cooked whole beetroot , chopped
50ml milk
200g self raising flour
1 tsp baking powder
3 eggs
25g butter, melted plus extra for frying

Variation 1 SWEET STYLE — Stack them high ! Children (and adults) love the vibrant colour.
Double dash of Maple syrup (add to batter mix)
1/2 tsp Vanilla extract (add to batter mix)
Toppings : anything you fancy! we like yogurt/honey, crunchy granola and some warm berry compote… yummm!
Variation 2 BOUJIE BRUNCH STYLE — go the extra mile with OHK Cafe’s fave savoury version! Follow the basic batter mix and make a batch of pancakes
TOPPINGS // ITS ALL IN THE PLATING! HAVE FUN
Whipped Greek Feta plus some extra feta for crumbling (simply blend with a pinch of salt add cream for desired consistency)
Dill
Capers
Lemon
Black pepper
Carrot Ribbons tossed in Olive oil
Smoked salmon or poached eggs (optional)
DIRECTIONS
Whizz the beetroot with the milk in a high speed blender or with a stick blender until smooth. Pour into a bowl with the rest of the pancake ingredients and whisk until smooth and vibrant purple
Put a small knob of butter in a large non-stick frying pan and heat over a medium-low heat until melted and foamy. Pour approx 2 tbsp of the batter into little rounds on the pan. You should be able to cook 3 or 4 at a time for smaller stacking style pancakes ! Cook for 2-3 mins or until bubbles begin to appear on the surface then flip over and cook for a further minute until cooked through. Repeat with any remaining batter. Heat oven to lowest setting and keep the pancakes warm in there until needed.
